Capricorn season (December 22–January 19) arrives quietly, just as the sparkle of the holidays begins to soften. The celebrations may still linger, but the energy shifts. This season invites us to slow down, return to routine, and find comfort in steady, nourishing rhythms.

It’s easy to prepare, keeps well, and brings a sense of calm structure to the day. My kids love this breakfast while in the mountains, especially on the days they go night skiing because it sustains them throughout the day and makes an easy snack after skiing.

Ingredients:
3 cups rolled oats
2 apples, diced
2 cups milk or plant-based milk
2 eggs (or 2 flax eggs)
¼ cup maple syrup
2 tbsp melted butter or coconut oil
1½ tsp cinnamon
1 tsp baking powder
1 tsp vanilla
Pinch of salt
Top with peaches and nuts for an extra special touch
Instructions:
Preheat oven to 375°F (190°C).
In a large bowl, mix all ingredients until well combined.
Pour into a greased baking dish.
Bake for 35–40 minutes, until set and lightly golden.
Let cool slightly, slice, and enjoy throughout the week.
